A Love Affair with Herbs
While spices may be the first to spring to mind when one thinks of Persian cuisine - it is the culture’s vast selection of herbs that give their food the unique, vibrant flavours they’re often known for. From making beverages to cooking main courses, herbs play a major role in any Iranian kitchen, granting a fresh aroma and taste to any main dish, drink, or entrée.
It's About the Table, Not the Plate
The preparation of Persian dishes is traditionally done through shared tasks among a big, extended family. (Such communal activity also extends to other forms of art such as rug weaving, painting, and poetry.) Meals are thus meant to be enjoyed in a family group or social gathering, where main dishes are shared among the rest at the table, rather than served on individual plates.
The World of Spice
No Persian kitchen is complete without spice. Teeming with varying scents, colour, and flavourful aromas, these ingredients are used to cap off any dish with a unique taste that is distinctly Persian.

Persian cuisine has evolved for over 3500 years, with its main influences originating from the culinary staples of the Mediterranean, Ancient China, India, Rome, and the Middle East. Due to significant regional and seasonality differences, foods have also developed their specific tastes based on the customs, culture, and geography of certain areas in Iran.
